Our Atoka cheese is a soft-ripened variety much in the style of a “goat cheese,” except that it, like all of our cheeses, is made with cow’s milk directly from local farms. This keeps the focus on a buttery, creamy, and somewhat tangy flavor profile with hints of crisp green apple. Hand-formed in a mini-truckle shape, this product has a beautifully patterned rind and brings a lot of focus to texture. Soft and creamy outer layers gently give way to a dry and crumbly center. Weighing in at 4.5oz, Atoka’s adaptable characteristics find it standing alone on a cheese board, as a spread with fruit preserves such as fig or blackcurrant on toasted French bread, crumbled into salads or pastas, and even used with as a recipe ingredient.
