Bring to Room Temp – Let the tenderloin sit out for 20–30 minutes before cooking for even heat.
Trim & Season – Remove any silver skin, then season
generously with kosher salt, cracked pepper, and herbs or spices. A
marinade also works beautifully for extra flavor.
Sear for Flavor – Start in a hot skillet or on the grill to create a golden-brown crust on all sides.
Finish Gently – Transfer to a 375°F oven or indirect heat on the grill until the center reaches 145°F.
Don’t Overcook – Pull it at 145°F for juicy, tender pork—slightly pink inside is perfect.
Rest Before Slicing – Tent loosely with foil and rest for 5–10 minutes before carving into medallions.
