Meet the Founder Elaine Boland

Elaine Boland is the pioneering mother and Chief Bone Broth Mama who founded Fields of Athenry Farm. Her career path and the farm’s mission were fundamentally shaped by a personal challenge: the diagnosis of her daughter, Bernadette, with Cushing’s disease at a young age.

When doctors prescribed food medicine—specifically organ meats and nutrient-dense
foods—to combat the illness, Elaine embraced the challenge. She was tasked with developing powerful, healing foods that her children would actually consume. Elaine spent over two years in her kitchen perfecting a delicious, gelatinous, and potent bone broth, which she named “Bernadette’s Broth.”

Her success in using this food to help stabilize her daughter’s health after surgery became the farm’s core philosophy. Elaine is now the champion for providing premium, pasture-raised meats and broths, believing that food raised with integrity and prepared with love is the most effective preventative medicine. She transitioned from being a dedicated mother seeking a cure to an advocate sharing her life-saving, nutrient-dense products with the wider community.
