Bring to Room Temp – Let the roast sit out for 45–60 minutes so it cooks evenly.
Score & Season – Lightly score the fat cap in a diamond pattern, then rub with kosher salt, cracked pepper, and spices. For a holiday touch, add cloves or a glaze.
Roast Gently – Cook uncovered at 325°F, allowing about 20 minutes per pound until the internal temperature reaches 145°F.
Glaze Toward the End – If using a sweet or savory glaze (like honey, mustard, or maple), brush it on during the last 30 minutes so it caramelizes without burning.
Rest Before Carving – Tent loosely with foil and let rest 15–20 minutes before slicing to keep the juices in.
