Farm-Fresh Tips for Pork Side/Belly

Pork belly (also called side pork) is rich, flavorful, and wonderfully versatile. From crispy roasted slabs to slow-braised comfort dishes, this cut delivers tender meat and delicious layers of fat. Here’s how we prepare it at Fields of Athenry.

Score the Skin – If your belly has skin on, score it lightly in a crosshatch pattern to help it crisp.
Season Generously – Rub with kosher salt, cracked pepper, garlic, and herbs. A marinade with soy, honey, or vinegar also adds depth.
Roast for Crispness – Start at 425°F for 20 minutes to crisp the surface, then reduce to 325°F for 1½–2 hours until tender.
Or Braise Low & Slow – Cook gently in broth, cider, or wine with aromatics for 2–3 hours until melt-in-your-mouth tender.
Check Temperature – Pork belly is best when fork-tender, juicy, and full of flavor.
Finish with a Blast – For extra crispness, finish under the broiler or on a hot grill just before serving.
Serve Boldly – Slice into slabs, cube for stir-fries, or shred into noodles, buns, or tacos.
