Season Generously – Sprinkle with kosher salt, cracked pepper, and your favorite herbs or spice rub.
Sear for Flavor – Start over medium-high heat to get a golden crust. Love to use butter or lard for this part.
Finish Gently – Lower the heat or move to indirect heat until cooked through. Love to add white wine for this part for added flavor
Don’t Overcook – Remove from heat at 160°F; it will rise to 165°F as it rests.
Let it Rest – Give it 5 minutes before slicing to keep the juices inside.
