Pat Them Dry – Start with paper towels to help them sear beautifully.
Season Generously – Coat with kosher salt, cracked pepper, and your favorite spice rub or marinade.
Sear for Flavor – Cook over medium-high heat to get a golden crust on each side.
Finish Gently – Reduce heat or move to indirect heat until cooked through.
Cook to 170°F – Thighs stay juicy and tender even when cooked beyond 165°F.
Rest Before Serving – Let them rest for 5 minutes to lock in flavor and juices.
